Grandma’s Potato Pancakes

Potato Pancakes with Chives & Applesauce Garnished with Cinnamon


I decided to make potato pancakes for the first time last night. I haven’t had homemade potatoes pancakes in long time, and when I say “a long time,” I mean probably 12 years, so I couldn’t really remember the taste and flavor, but I knew that I had loved them when I was younger. When I bit into the first potato pancake hot off the griddle, I was assuming it wouldn’t taste exactly how I remembered. To my surprise, they tasted EXACTLY like what I remembered. My brain was instantly flooded with memories of my grandma cooking them up in her kitchen while my sister and I ate them as they came off the griddle for lunch. She usually served it with a side of applesauce, so that’s how I served them last night. It was a great dinner, and even Mr. FoodieforLife enjoyed his share.

Potato Pancakes

Ingredients:
4 large Idaho Potatoes, peeled and grated
2 heaping tablespoons Flour
1 Egg slightly beaten
1 teaspoon salt
¼ teaspoon minced onion (I substituted onion powder; that’s all I had on hand)
Olive Oil
Chives, chopped

Directions:

Coat the bottom of a large frying pan or griddle with a generous amount of olive oil; heat on medium-high heat. Meanwhile, while oil is heating, mix all ingredients together in a large mixing bowl. Drop by spoonfuls into hot oil. Fry until golden brown on both sides; about 3-5 minutes on each side. Remove from frying pan, and place on a paper towel lined plate to remove excess oil. Serve warm with a side of applesauce.
