Recipe: Bruschetta


Because I am growing tomatoes this summer, there was an abundance that turned ripe all at the same time this past week. I was wondering how to use all of them so that they didn’t go to waste, and I decided to make bruschetta cod for dinner. Bruschetta is a very simple recipe that's made of fresh ingredients and can be used as a topping on many different proteins or as the traditional bruschetta a top a slice of French bread. I’ve also tried this recipe using chicken. Both ways, they taste delicious and its low in calories! As the bruschetta cooks, the flavors reduce, and they become better and better with time. Here’s a recipe that sure won’t disappoint you. It can make an everyday meal elegant and nutritious at the same time!

Bruschetta Cod
Ingredients:
8 Roma tomatoes, chopped
½ cup diced onion
3 cloves garlic, minced
8 basil leaves, chopped
3tbsp extra virgin olive oil
3 tbsp balsamic vinegar
Salt and pepper to taste


Prepare ingredients as indicated and place in a bowl. Mix all ingredients together thoroughly. Let the bruschetta sit for about 10-15 minutes so the flavors can blend. When ready, place a top cod  (or chicken) in a sauté pan heated to medium and bring to a boil; reduce heat to low and cover with the lid. Let cook about 5-10 minutes on either side until cod begins to flake with a fork.
