Artisan Lettuce Salad with Champagne Dressing


This was such a quick and easy recipe and it will make a great lunch for the hubby and I this week at work.

Salad Ingredients:
2 Artisan Lettuce bundles (you can use your favorite variety of lettuce or salad greens)
1/2 cup croutons (I made mine homemade)**
1/4 cup grated Parmesan cheese

Champagne Dressing:
2 tsp Dijon mustard
1/4 cup Champagne or white wine vinegar
1 tsp honey
1/4 tsp black pepper
1 1/2 Tbsp water
3/4 cup extra virgin olive oil
1 small onion, finely chopped.

Directions:
1. Cut core end of lettuces to release the leaves; cutt the heads in half lengthwise. Rinse and drain well; pat dry.

2. To prepare the vinaigrette whisk together mustard, vinegar, honey, pepper and water in a small bowl. Whisking constantly, slowly add oil. Stir in onion.

3. Top lettuce wedges with croutons and Parmesan cheese. Drizzle with vinaigrette to taste.

Makes 2 servings

**Make your own croutons with bread, butter and seasonings- slice and bake at 350F for 10-15 minutes or until golden brown.
