Potato Blossoms

So easy to make and so delicious!

Olive Oil
Idaho Potatoes (however many you want to prepare- 1 per person)

1. Heat oven to 400 degrees. Meanwhile, wash and dry potatoes. Thinly slice potato going with the width being careful not to cut all the way through the bottom skin.  Place potatoes on a foil lined pan and drizzle each potato with olive oil and sprinkle with salt. Bake for 40 minutes or until tender, remove from oven and salt again. The potato slices should easily detach from the rest of the potato.

2. Serve one potato per person with ketchup or a dip or your choosing.

I served these potatoes along side the Roman-style Chicken I made on Sunday.
