Corn, Avocado and Tomato Salad
Linguine with Tomato Basil Sauce


This salad is delish as a side salad or served as an entrée! I decided to prepare it as a side salad for our Wednesday night pasta dinner, and I was able to use fresh basil from our garden as a garnish to those otherwise, plain noodles and sauce. It looks like its from a restaurant right? Well, herbs are a great way to liven any dish. 

Corn, Avocado, and Tomato Salad

Ingredients:
¼ cup Frozen Corn, thawed
1 Avocado, chopped
¼ cup Cherry Tomatoes, cut in half
1 cup Fresh Spinach
½ Romaine Heart, chopped
1/8 cup Parmesan Cheese, grated
½ Cup Precooked Chicken Strips, chopped
Dressing

Directions:
In a large bowl, combine fresh spinach and romaine. Add corn, avocado, tomatoes, and chicken and mix until blended. Sprinkle parmesan cheese on top of salad and drizzle your favorite dressing on top prior to serving. A balsamic, Italian or Caesar dressing would go great with this salad.

Serves: 4
